Green Jell-O with Pineapple and Carrots is a vibrant retro dessert of tangy lime gelatin studded with sweet pineapple tidbits and tender carrot ribbons. Ingredients

1 package lime gelatin

1 cup boiling water

1 cup cold water

0.50 cup pineapple juice

1 cup canned pineapple tidbits, drained

0.50 cup shredded carrot

Steps

1. Sprinkle gelatin over boiling water; let bloom 1 minute, then stir until fully dissolved.
2. Stir in cold water and pineapple juice.
3. Fold in drained pineapple and finely shredded carrot.
4. Pour into a lightly greased mold or dish.
5. Refrigerate uncovered until set, about 4 hours, then unmold (if desired) and serve.
